The Original Black Garlic Clove is the result of a regular white Garlic that is aged to perfection to give you a rich, sweet & balsamic-like, black garlic cloves. These cloves double the goodness of regular garlic without the “garlic breath” but remember they are naturally sticky product, so may stick together.

What is black garlic?

Black garlic is carefully chosen, high quality, raw garlic that has been expertly aged using nothing but heat and humidity for a very long time. The exact method uses a month-long fermentation process within a humidity-controlled environment. This process turns these once fresh white cloves, soft, black & sweet, and removes their pungent odour too, making black garlic more palatable and appealing to many individuals.

Where does black garlic come from?

Black garlic has been used in many Asian cusines for centuries, and is thought to have originated in South Korea. In fact, many South Koreans consider black garlic to be a health Food supplement, as it has high traces of Antioxidants that help to fight the damaging effects of harmful free radicals.

In recent years, black garlic has been seen more and more in modern western and international cuisines and has been embraced by chefs everywhere, particulary in Europe, Australia and the United States of America.

What does black garlic taste like?

Black garlic has a sweet/savoury umami flavour and tasting notes of molasses, balsamic, tamarind, caramel, dates and much more.

Ingredients

50g Feta, 125g asparagus, 8 The Original Black Garlic Cloves roughly chopped, 12 large eggs, a large knob of butter, salt and pepper to taste.

Instructions

​Bring an inch of salted water to a boil in an ovenproof frying pan. Add the asparagus to the pan and par boil for 3 minutes then drain. Preheat oven to gas mark 6/200°C. In a bowl whisk together the eggs, then crumble in the feta, add the asparagus and black garlic and season with pepper and salt (not much as feta is quite salty). Clean and dry the frying pan used to par boil the asparagus. Add a knob of butter to the pan and pour in the egg mixture and cook over a low heat for 5 minutes, then transfer to the oven and cook for a further 15 minutes or until the frittata is set.
