To determine the difference between a K Factor 12 and a K Factor 16 Manuka Honey, Wedderspoon measure distinct concentrations of Manuka pollen. Using nuclear magnetic resonance imaging, Wedderspoon can easily identify the pollen profiles of their honeys, as well as the live enzymes, Antioxidants and various other phytochemical components (K Factor 16 guarantees higher than 75% pollen count).
