What is Chicory?

Chicory, or Cichorium intybus, is a woody, herbaceous plant in the dandelion family. It usually has bright blue flowers, though they can sometimes be white or pink.

The plant itself can be quite pretty, but chicory is cultivated for its leaves and its roots. Chicory roots are baked, ground, and often used as a coffee substitute or additive.

In addition to being a coffee substitute or additive, chicory can also be used in baking or brewing. It imparts a slightly bitter flavour that can be offset with sweetness. Chicory is often used in French cooking, and it's gaining popularity in other cuisines as well.

Directions of Use

Put 2-3 teaspoons into a large mug. Fill to the top with freshly heated plant-based milk. If required, add your favourite sweetener.
