What is pesto mayo made of?

It is made from potato starch instead of egg. Potato starch is a Type 2 Resistant Starch which can reduce insulin resistance, burns fat and reduces hunger. It does not have an impact on blood sugar in the same way as a cooked potato too, so is therefore considered Keto friendly.
