Empty the packet of pancake mix into a bowl with 750ml of water, or your choice of milk, and mix into a smooth batter. Leave the mix to rest for about ten minutes. Heat five tablespoons of oil in a non-stick frying pan on a medium heat then add the batter and fry for approximately six minutes, flipping halfway. Serve with fresh juice or lemon juice.

Alternative recipe

Ingredients: 1 Avocado, mashed. Half a lime, juiced. 2 Tablespoons soya yogurt. 1 Teaspoon sesame seeds. A handful of mixed greens, to serve. Chilli flakes, to serve. Sea salt flakes

Method: Follow the above directions but as the pancakes are cooking, prepare the avocado cream. Mix the avocado with lime juice, yogurt, sesame seeds and salt and pepper. To serve, layer the pancakes with avocado cream and salad leaves, sprinkling over your preferred amount of chilli flakes and sea salt flakes. Serve and enjoy!
