Delicious Baobab Brownies

Baobab is a delicious, nutrient-dense, raw wholefood. It is an excellent source of Vitamin C, Calcium, Potassium, Thiamin and fibre, and a source of vitamin B6.

Method:

  1. Using a food blender, grind the almonds to a flour. Remove them and grind the cacao nibs.
  2. Put the ground almonds, nibs and raisins in the food processor and process until the raisins are broken down.
  3. Then add in the cacao powder, baobab, cinnamon and process once more until it’s evenly mixed.
  4. Add your olive oil and agave, and process while the mixture starts to get sticky. Pour the water in slowly while the food processor is on, and the mixture should become a dough.
  5. Press your dough into a square baking tray lined with greaseproof paper or a silicon mould.
  6. Leave it in the fridge to set for at least 2 hours.
  7. When you’re ready, cut it into squares, 3 x 4, or 4 x 4 if you prefer smaller fingers. 

Preparation Time: 20 minutes to prepare & 2-3 hours to set.

Serves: 12 squares

You will need a grinder & a food processor.

The brownies will keep well in the fridge in an airtight container for about two weeks.

  • 2 cups (200 g) almonds
  • 1 cup (125 g) cacao nibs
  • 1/2 cup (50 g) raisins
  • 1/2 cup (50 g) cacao powder
  • 4 tbsp agave syrup
  • 2 tbsp Baobab powder
  • 2 tsp cinnamon powder
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (60 ml) water
