Amaranth is a very tall plant with broad green leaves and bright flowers. It was a major food crop of the ancient Aztecs and contains large amounts of Calcium, iron and vitamin C and is naturally gluten free. It should be cooked for 15-20 mins in plenty of boiling water and can be added to soups or sprinkled on salads. As a treat it can be “popped” like popcorn and chocolate, molasses or honey added. There is evidence that it can lower blood cholesterol levels.
