Raw Coconut

Coconut “meat” is the rich, white lining that is contained within the shell of the coconut. It should be a staple ingredient in the food cupboard of anyone on a raw food diet. It can be grated on to cereals or salads or eaten as strips with fruit and/or yogurt. It can also be mixed with a variety of other raw goods and flavourings to make a type of tasty chutney side dish.
