Is vegetarian rennet as good as animal rennet?

Just Wholefoods Vegeren has been developed for use with pasteurised full-fat cow’s milk and is made from a type of fungus - Mucur Miehei. Even though it is derived from mold, there is no mold contained in this Food approved milk clotting enzyme.

Can cheese be made without rennet?

Directions of Use

For cheese:

Use 10 drops of Vegeren to 1 pint (568ml) of warm, full-fat milk (32°C) and proceed with your recipe.

For Junket dessert:

Warm 1 pint (568ml) of full-fat milk to 32°C. Add 1 tbsp sugar, a few drops of vanilla extract, 10 drops of Vegeren and stir well. Pour into a bowl, then leave to cool and set. Serve with fresh fruit or a sprinkling of nutmeg.
