Apricot Kernels are the soft parts found inside the Seeds of the apricot fruit. They are thought to be a good source of Iron, Potassium and dietary fibre, however are often praised for their high traces of amygdalin (vitamin B17).
Quite simply, sweet apricot kernels do not have as much vitamin B17 in the bitter tasting seeds do.
In the past, bitter apricot kernels have fallen under the tag-line of a "medicinal ingredient," but there is no conclusive research to back up this claim to date. There is, however, studies attempting to determine whether immune boosting Amygdalin can be used to help lower Blood Pressure and the pain connected to arthritis - this research continues.
