Coconut Flour

As interest in grain free diets continues to rise many cooks are looking to coconut flour for their baking. When coconut milk is pressed from the solid coconut “meat” bits of solid coconut remain and this is dried at low temperatures and ground to form a soft, fine powder. It offers a gluten free and protein rich alternative to traditional grain based flours but we suggest you  follow an established recipe as the amounts needed vary.
