Ingredients:

50g coconut oil
75g light brown sugar
2 eggs
225g plain gluten free flour
2tsp (10/15g) baking powder
4 or 5 ripe bananas

Method:

Pre heat oven to Gas mark 4, 350 f, 180 c.
Place all the ingredients into a mixing bowl, use an electric whisk to mix together until smooth.
Bake in preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped. Makes approximately 12 muffins.

Variations:

Try adding 75g desiccated coconut or 75g dried cranberries / cherries or 50g chopped walnuts.
